Two Roads Route of All Evil Stuffing made with Route of All Evil Cornbread

1 loaf Cornbread
2 cups Crushed Ritz Crackers
½ lb Diced Pancetta
4 medium Shallots for Minced Shallots
3 cloves Minced Garlic
1 cup Dried Cranberries
1 bottle Route of All Evil Black Ale
1 whole Orange for Orange Zest
Leaves off of 2 sprigs Sage
1 Tbsp    Rosemary
2 cups    Melted Butter
Salt and Pepper to Taste

In a large stock pot, cook the diced pancetta on medium high heat, until it begins to crisp up like bacon. Remove the pancetta from the hot pan and place on a plate with a paper towel to soak up the grease. Do not discard the drippings from the pancetta in the stock pot. Place the
Diced shallots and minced garlic into the pot. Cook until shallots begin to become translucent, then add the Crushed Ritz and the cornbread. Mix all together using a wooden spoon to break apart the cornbread. Add the pancetta, cranberries, and the herbs. Pour in the melted butter, and slowly add the ROAE. Mix together with a wooden spoon. If you are going to stuff the turkey with the stuffing, the mixture should be sticky but not loose. If you are not going to stuff the turkey, add a little more ROAE until the mixture has a porridge like consistency.Cook on a medium low heat consistently stirring until all of the liquid is absorbed. Add Salt and pepper to taste. Enjoy a Route of All Evil, or two while waiting for the turkey to finish up. Serve the stuffing hot.
